Last night’s dinner came out great. I used this recipe from the Food Network to make a shepherd’s pie - I used ground turkey, though, so I understand that’s a cottage pie, right? My cupcakes this year were flavored with creme de menthe, and I attempted a swiss meringue buttercream, something I’ve tried several times previously with no success. It came out fine, but I think I don’t really care for smbc all that much. It tastes like sweet butter. Don’t get me wrong, though - the cupcakes were delish.     BTW, my cleaning lady gives her seal of approval to the cupcakes. She said they tasted light and not as sweet as store-bought. And then her sugar high carried her through cleaning this pit of a house.

    I do agree that SMBC is uber-sweet but I tend to run in to that problem only worse when it comes to plain ol’ buttercream. I need to craft a foolproof recipe.

    Bianca, it’s not the sweetness that bothers me as much as the fact that I feel like I’m eating a stick of butter. I only used 2 sticks, where the recipe called for 3. Maybe just do one stick? But will that generate enough frosting?

    I don’t know, does turkey make it a cottage pie? Where’s Nicci? I find it all very amusing, particularly since I did not realize until very recently that it was called shepherd’s pie because of the SHEEP, duh!

    Yea I think it would. The egg whites expand like 8 times in size after the whipping process.
