Vegan Banana Split Cupcake
I made a dozen of these for my friend Sandy, who came to visit this weekend and happens to be vegan. We brought them to a friend’s house and they went over really well. I will definitely make these again. The cake is banana and pineapple, with some chopped chocolate baked in. The frosting is “butter”cream, topped with sprinkles, crushed walnuts, drizzled chocolate and a maraschino cherry. The recipe is from Vegan Cupcakes Take Over the World. Love.

Curious about the batter, and what kind of takes the place of eggs found in a traditional cake batter…

I think the bananas actually replace the eggs in this instance.
