A few years ago, a student of mine from Louisinana said that the important thing about cooking okra is to add an acid. I don't know how much lemon juice, but that acid will cut the sliminess and make it good. he agreed - okra is good, but boiled is vile.

Sandra, it's delicious. It recalls the fried pumpkin blossoms of my misspent youth.

Mmmmm. Fried okra. Makes me want to head down to Son's Place and grab some with a couple of pieces of fried chicken, a side of collard greens, some cornbread and sweet tea. Perhaps even some banana pudding for dessert.

OK, let me just focus on the okra for a minute. As a southerner, fried okra is a staple of almost every meal. Some people to eat boiled okra but only as some sort of punishment. It's terrible disgusting that way. Fried, though? OMG SO GOOD. LOVE. I have it about once a week. :)

Oh, and yes it is totally the dog days of summer. Cranky, tired, disinterested...all of it.

Everything I read about okra said that it's slimy and snotty. I think that's why it's good in gumbo, because it thickens the broth or something? Gross.

Anyway, fried = no sludge. I swear. Alton Brown says so, too:

I also mixed in some banana peppers. Mmmmm.
