Pumpkin Cupcakes & Cream Cheese Frosting
I made pumpkin cupcakes with cream cheese frosting this weekend, and had my friends’ kids decorate them. Their handiwork above. I cannot recommend the Martha Stewart recipes enough! Give them a try — they’re so easy.
- Martha Stewart pumpkin cupcakes
- Cream cheese frosting (note: I actually used neufchatel cheese, and you can’t tell the diff. Also, this makes a ton of frosting. You can probably halve it and still have enough for two dozen cupcakes.)

I made those cupcakes for the staff at the gym-I didn’t ice them, so they were more like muffins. everyone LOVED them! They were the easiest cupcakes I’ve ever made. I didn’t have brown sugar so I used a cup of white sugar plus 1/4 cup of dark molasses, and it was perfect.
