Last Night’s Dinner
Friday, September 29, 2006 at 08:19amLast night we quietly celebrated the geekboy’s birthday. I gave him a few PSP-related gifts, which seemed to go over quite well. We had cake, some beer for him, some wine for me, and just hung out on the new couches and watched Thursday night tv. We’re going to the city on Monday for shopping and a show, so we decided to be low-key last night. Anyway, for dinner I made the best linguine and clams I’ve ever made. I don’t know why they came out so much better this time, but I’m going to post the ingredients/recipe just in case:
1 head garlic, peeled and chopped/minced (we love garlic)
Olive oil
2 6 oz. cans minced clams (vegetarians can substitute chopped-up tofu for the clams)
Cracked red pepper
Salt
Lemon juice
White wine
1 box whole wheat linguine
1/2 cup or so of fresh grated parmesean cheese
Sautee the garlic with a generous amount of olive oil.
After a few minutes, add the clams. Add the juice from one can only to the garlic/clam mixture.
Sprinkle with cracked red pepper to taste.
Sprinkle with salt to taste.
Let simmer together for about ten minutes, then add a splash or two of white wine (whatever you’re drinking is fine).
In the meantime, have your boiling water ready for the pasta. After you add the wine to the clams, start cooking your pasta.
As the pasta cooks, add a couple squeezes of lemon juice to the clam mixture. If too much liquid is cooking off, add some more wine or some broth.
When the pasta is done, transfer to a bowl and pour the clam mixture over it. Toss in the grated cheese, mix up, and enjoy.

Well, in our defense, it was a small-ish head. But we worship garlic in my house. You don’t need to use that much. It would be very yum with chicken, I bet!

That’s why I started making it, because Laura’s was so good. I couldn’t remember if we used lemon zest, so I just stuck with the juice. But yes, lemon zest! We miss you guys.
