And there used to be a simple check box on the side to select the audio or not - sounds like that may have changed though. I haven’t used imovie in a while.

Two ways:

In the advanced menu, you can choose the option of splitting the audio from the video and then clear (via the edit menu) the sound section. Alternately, you can just turn down the clip (when you’ve moved it to the bottom bar, you can adjust the volume on the bottom of the player — to the left, you’ll see “100%.” Click that, it’s like a drop-down or a drop-up or whatever, and move it all the way to 0%.
