Chocolate-Espresso Snowcaps
Wednesday, December 12, 2007 at 09:20amI’ve started my holiday baking - I’ve found I can make cookies early and then store them in an airtight container in the garage. They become almost frozen in there and taste fine when I pull them out around Dec. 22nd. Anyway, last night I made these, and they came out nicely. I expected them to be softer; they’re not, but delicious nonetheless. Maybe I baked a tad too long? Regardless, these would go great with after-dinner coffee. Today, I might make these. Also, what kind of frosting would you want on top of a gingerbread cupcake? Lemon buttercream, plain buttercream with candy canes, or cream cheese frosting?

Plain buttercream with candy canes. But I’m obsessed with candy canes, they are my favorite candy EVER!

hey fg - what is your all time favorite cookie to make? i have a big christmas party on the 22nd as well, and although i’m sure other desserts will be made, i’d like to go all out this year! (mainly b/c i lean towards the thought that my presence is gift enough…
so! this year i contribute and i’d like to hear what your faves are, mainly b/c i’m lovin’ all your baking entries!!!

marta, I work (or lately, not-work) at home, so it’s easy for me to get baking done.
ali, my all-time fave are my grandmother’s anise cookies. I have her recipe on an index card and I treasure it, as she is in the grips of dementia now.
Anyway, I don’t even know how to spell what they’re called, but it’s pronounced “t’dalls.” They taste, to me, like the holidays. My mom makes them, too, and she uses a different recipe than I do, so it’s double the fun!
A real crowd-pleaser are meltaways, a recipe I got from Megs a few years ago. I can try and find it for you if you’d like.
I also love shortbread. It’s relatively easy to make, and you can dip one half in melted chocolate and put some sprinkles on it and people will go bonkers.

I bought the 100 holiday cookies (or whatever it was called) special issue Martha Stewart magazine a couple of years ago, and the Lime Meltaways recipe rocked so badly. YUM. Limey, crumbly shortbread basically. One of my all time favourite biscuit (as we call them) recipes is the Orange Polenta Biscuits by Jamie Oliver. Never fails.

The cookies came out very tasty, but the dough was awful. I followed the recipe to the letter, and the dough was dry and crumbly. Very messy. I won’t be using that recipe again, even though the end result was good.
