I made pumpkin cupcakes with cream cheese frosting this weekend, and had my friends’ kids decorate them. Their handiwork above. I cannot recommend the Martha Stewart recipes enough! Give them a try — they’re so easy.

- Cream cheese frosting (note: I actually used neufchatel cheese, and you can’t tell the diff. Also, this makes a ton of frosting. You can probably halve it and still have enough for two dozen cupcakes.)

I made these for Sophie (Shannon’s daughter) for her 5th birthday party. I hear they went over well. Yay! More after the jump.
Yesterday, we Freshies threw a BBQ in honor of the very supportive veterans on our derby team. A good time was had by all; we pigged out on burgers and salads and lots and lots of desserts and fruit. Above is my contribution to the festivities — chocolate cupcakes, of course, decked out in our team colors.
I was a little worried about having a practice right after the BBQ, but I needn’t have. Instead of a hard drill practice, we spent 90 minutes or so playing games. We still got in a good workout and we still sweat like pigs, but it was all in good fun. We played things like dodge ball, capture the flag and practiced our baseball slides by acting as human bowling balls sliding into traffic cones aka bowling pins. The highlight of the night was definitely Blob Tag, which was the funniest/scariest thing I’ve ever done on skates. At one point I was being whipped around so hard I thought my arm might come out of the socket. We lost control of the blob and I found myself hurtling toward the cement wall at about, oh, I don’t know, a thousand miles an hour. I heard A-Bomb yelling at me, “Knee fall! KNEE FALL!” So I dropped a knee and goddamn if it didn’t work perfectly and I gently bounced off the wall. If I hadn’t, I’d just be a splat right now.
It was a great day of bonding and fun. These Hellrazors are some remarkable chicks. I’ve already forged some wonderful friendships. I don’t know if I’ll ever be good enough to compete, or what the future holds for me on my eight wheels, but I do know this — joining roller derby is definitely the best thing I’ve ever done for myself.

It was Greater Czarina’s daughter’s birthday this weekend — our little Czarinette is now 13 years old and barreling nicely into teenagedom and all that comes with it (Twilight obsesh, boysboysboys). Anyhoo, these are chocolate and vanilla, rolled in happy sprinklies and topped with fondant cutouts.
For yesterday’s Easter dinner, I decided to try my hand at some gluten-free cupcakes, as my cousin follows a gluten-free diet. I’ve only made gluten-free cupcakes once (chocolate) and I found them to be quite gritty. So I searched online for a better recipe and came across Gluten-Free Goddess and her recipe for Orange Creme Cupcakes. Success!
