I made the yummiest cupcakes this weekend. Elvis-inspired chocolate cupcakes, with peanut butter and banana buttercream frosting, topped with a mini Elvis Reese’s peanut butter cup. I also baked a cup into the bottom of the cake. HEAVEN. I’m calling them “Hunka-Hunka Cupcake Love.”

No recipe, really. I made it up. The cake is just a regular chocolate cupcake recipe. I use Martha Stewart’s “one bowl chocolate cupcakes.” After you put the batter in the cups, drop in the piece of candy. Bake normally. The frosting is a stick of butter (although in retrospect I probably would have used 1/2 stick or less), a cup of peanut butter, 3 pureed bananas, a splash of milk, and confectioner’s sugar (about 4 cups). The frosting took a lot of playing with, as the consistency was gloppy. So I can’t really give exact instructions.
I would love to make these for my Elvis fanatical friend! Regardless, I hope those elvis PB cups come to Canada.
